1 kg of picanha. 4 white egg. 1 kg of coarse salt. ½ cup (tea) wheat flour. Branches of fresh thyme.
HOW TO MAKE PICANHA:
Preheat the oven to 200ºC (high temperature).
In a bowl, put the egg whites, the coarse salt and the wheat flour and mix quickly
with a spoon. In a baking dish, place the coarse salt mixture and spread with your hands until
you get a layer the size of the meat. Arrange the thyme over the coarse salt and place the picanha on this layer. Wrap the whole picanha with the rest of the mixture of coarse salt and press it to
be very firm. Place the picanha in the oven and cook for 1 hour. The layer of coarse salt after baking becomes a very hard plate and lightly golden.
With the aid of a knife, remove this plate and scrape the excess salt from the meat. Place the meat on a board and cut into thin slices.
