For food safety, raw ground pork products should be cooked to an internal temperature of 165°F for at least 15 seconds. We advise the use of a meat thermometer to ensure the proper minimum temperature is reached.

 

On the stovetop, you can poach raw-cased sausages to an internal temperature of 140°F and then fry or grill to 165°F. The meat may remain pink in the middle, which is fine as long as it has reached a safe temperature. You do not have to boil a sausage until it turns completely grey for food safety.

In fact, boiling can cause your casings to explode when the internal temperature reaches the boiling point. You may have noticed this when accidentally over-cooking sausages on the grill.
